Fresh mahi mahi fillets (1 to 1.5 inches thick)

Olive oil or avocado oil
-
Salt and pepper

Lemon zest (optional)
-
Optional marinades: citrus juice, pineapple, mango, ginger, garlic
-
Optional dry rubs: Cajun seasoning, blackened spice, smoked paprika
Instructions
-
Preheat grill to medium-high heat (about 400°F).
-
Pat mahi mahi fillets dry and brush with oil.
-
Season with salt, pepper, and desired spices or marinade.
-
Place fillets on the grill and cook for 3-4 minutes per side, or until opaque and flakes easily.
-
Use a fish spatula for flipping and avoid turning more than once.
-
Let rest for a couple of minutes before serving with your favorite sides and sauces.
Notes
Always oil both the fish and grill grates to prevent sticking. Use a food thermometer to check for 137°F internal temperature for perfectly cooked mahi mahi. Marinate for no longer than 30 minutes to maintain texture.
