Ingredients

  • 1 cup bell peppers, diced
  • ½ cup jalapeños or serrano peppers, sliced
  • 1 cup cauliflower florets
  • ½ cup carrots, thinly sliced
  • ½ cup celery, sliced
  • 4 garlic cloves, minced
  • 1 tbsp dried oregano
  • 1 tsp red pepper flakes (optional)
  • 2 tbsp salt
  • 1 cup white vinegar
  • ½ cup olive oil
  • 1 cup water

Instructions

  1. Place all vegetables (except garlic and herbs) in a bowl with salt and water. Let sit overnight in the fridge.
  2. Rinse and drain vegetables thoroughly.
  3. Mix vinegar, water, olive oil, garlic, oregano, and red pepper flakes in a bowl.
  4. Pack vegetables into sterilized jars and pour marinade over until submerged.
  5. Seal jars and refrigerate for at least 48 hours before use.

Notes

Giardiniera improves in flavor over time. For spicier results, add more hot peppers or red pepper flakes.
